Paramount crystals are used to aid in the melting of carob, chocolate, chocolate coatings and yogurt. The crystals may soften or melt during warmer weather. Melting is not considered a defect, as this is what they are intended to do. Once brought into a cooler enviornment, the crystals will again harden. Although the crystals may be in a solid piece, bits can easily be broken off or chipped to obtain the desired amount.
